PEPPADEW® Peppers Recipe

South African Bobotie with PEPPADEW® Peppers Recipe


3 Tbsp oil
4 to 6 PEPPADEW® peppers, chopped plus 2 Tbsp liquid from the jar
2 onions, finely chopped
Small handful of flaked almonds (optional)
600g minced lamb or beef
20ml beef stock
1-2 tsp medium curry powder
Salt and pepper
2 tsp garam masala
1 tsp ground turmenic
1 garlic clove, crushed
Knob of fresh ginger, peeled and grated
40g whole meal breadcrumbs
4 Tbsp fruit chutney (like Mrs. Balls – A South African brand)
1 tart green apple, grated

For the Topping:
2 Tbsp smooth apricot jam
6 dried bay leaves
2 eggs
250ml sour cream or crème fraiche

Heat the oil in a heavy pan and fry the onions until golden. Add the minced meat and fry, stirring to break up any lumps, until lightly browned. Drain off excess fat. Sprinkle the spice over the meat and stir them in with the garlic and ginger. Cook for 1 minute, then stir in all the remaining ingredients and season well. Cook for 10 minutes, stirring occasionally. Pack into a 20cm x20cm square baking dish, level the surface and leave to cool. Preheat the oven to 180C. Spread the surface of the mixture very thinly with jam and stud with the bay leaves. Beat the eggs and sour cream together, season and pour carefully into the dish, taking care not to disturb the base. Bake for 40-45 minutes, until the topping is golden brown and has set.
