Peppadew® Sweet Piquanté Peppers Recipe

PEPPADEW® Rosti Potatoes Recipe


4 medium potatoes, peeled
1 tsp salt and fresh black pepper
1 large onion, finely chopped
4 tsp parsley
3 1/2 oz PEPPADEW® Sweet Piquanté Peppers
2 oz butter, melted
5 1/4 oz coarsely grated vegetarian or parmesan cheese

  • Serves 4-6


Melt butter and sauté onions until soft. Coarsely grate potatoes. Combine with the Sweet Piquanté Peppers, onion, cheese and parsley. Season well. Divide into 12 mound-shaped portions. Place on a greased baking sheet. Bake for 20 min. in a medium oven, until golden.
