Poached Honey Pears Recipe with Ricotta Cheese & PEPPADEW® Peppers


10.5 fl oz dry white wine
5 oz. castor sugar
1 vanilla bean, split length-ways OR 0.17 fl oz. vanilla essence
2 strips of orange peel
4 firm pears, peeled (cored if required)
7 oz.  low fat ricotta cheese, drained
3.5 oz. PEPPADEW® Peppers, drained and finely chopped
2.7 fl oz. honey
2.7 oz. pistachio nuts, coarsely chopped

Mix the wine, sugar, vanilla bean, orange peel and 8.5 fl oz. water in a heavy-based saucepan and stir over a low heat until sugar dissolves. Boil syrup for 5 minutes .Add the pears and bring to the
boil, reduce heat and simmer covered for 10 minutes or until pears are soft.

Remove from the heat and allow pears to cool in the liquid. Remove from liquid with a slotted spoon and set aside, reserving the liquid. Process the ricotta cheese and the PEPPADEW® Peppers with 1 fl oz. of the poaching liquid in a food processor until smooth. Spoon the ricotta mixture into 4 bowls topped with pears and drizzle with honey. Serve immediately sprinkled with pistachio nuts
