1½ sticks butter
2 (4-ounce) containers crumbled goat cheese
2 cups self-rising flour
1 cup sour cream
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
½ cup chopped PEPPADEW® peppers
Preheat oven to 350 degrees. Grease and flour two 12-cup muffin pans. Melt butter in a large saucepan. Remove from heat and add goat cheese, flour, sour cream, spinach and PEPPADEW® peppers; stir to combine. Distribute batter evenly in prepared muffin pans. Recipe will make between 15-20 muffins, depending on cup size. Cook in preheated oven for 20 to 25 minutes. Cool muffins in pans for 5 minutes before removing.
