PEPPADEW® Peppers Recipe

Cheese Muffins Recipe with PEPPADEW® Peppers


2 Cups all-purpose flour
1 Cup milk
2 Tablespoons sugar
4 ounces extra sharp cheddar, shredded or grated
3 Teaspoons baking powder
1/2 Cup PEPPADEW® Peppers, diced (about 10 peppers)
4 Tablespoons unsalted butter, melted
Pinch of salt
1 large egg

Making the batter: Combine milk, melted butter, and eggs in a small bowl. In a separate, larger bowl, mix together the dry ingredients. Stir in the wet ingredients into the dry mix. Once that’s all stirred together, gently stir in the Peppadew® peppers and the cheese. Baking the muffin: Butter the individual muffin cups. Fill each cup pretty high. They will not rise a lot due to the weight of the cheese and the PEPPADEW® peppers. Bake at 350 degrees for about 20-25 minutes. When they’re done, remove them from the tin and let them cool on a wire rack for a few minutes. Best when served warm. They can be served the next day.
