500g self raising flour (not bread flour)
100g mature Cheddar cheese, grated
1 tsp salt
8 PEPPADEW® peppers, chopped
1 Tbsp oil
Melted butter for glazing
330ml can lager (beer)
Put the flour in a deep bowl and add the salt. Make a well in the center and add the oil and lager. Stir, and gradually incorporate the surrounding flour to make a dough. Add the cheese and PEPPADEW® peppers. Knead for about 10 minutes, making sure the PEPPADEW® peppers are well distributed, then form the dough into a ball and put back in the clean bowl. Cover the bowl with saran wrap and set aside for 1 ½ to 2 hours, until the dough has risen. Knead the dough again, shape into 10 to 12 rolls, and leave for about 30 minutes to rise again. Preheat the oven to 200C. Brush the tops of the rolls with melted butter and bake for 30 minutes until golden brown.
