PEPPADEW® Peppers Recipe

Mushroom and PEPPADEW® Sushi Recipe


1 cup sushi rice
4 sheets of nori
1 cup water
6 portabellini mushrooms, sliced
2 Tbsp rice vinegar
1 avocado, sliced
2 Tbsp sugar
1/3 cucumber, julienne
1 pinch of salt
4 whole PEPPADEW® Goldew Peppers or the original Red PEPPADEW® peppers, sliced

To make the rice: Wash the rice and rinse thoroughly. Place the rice and water into a pot and cook gently until the rice is just tender and the water has been absorbed. Mix together the rice vinegar, sugar and salt; cook over a medium heat until sugar has dissolved. Allow to cool. Place the cooked rice into a large mixing bowl; then pour the vinegar sauce over the hot rice and mix. Place a sheet of nori onto a sushi mat and then cover it with a thin layer of sushi rice – push it down with your fingers. Lay a row of mushrooms, avocado, cucumber and sweet and sour PEPPADEW® Goldew peppers or the original Red PEPPADEW® peppers onto one side of the rice. Roll the sushi roll into a tight cylinder. Slice it into bite size pieces with a sharp knife and serve with soya sauce and pickled ginger. Repeat with the remaining ingredients.
