PEPPADEW® Lamb Burgers with Spinach and Feta Recipe


For yogurt sauce:
12 oz plain Greek yogurt
2 tbsp lemon juice
2 garlic cloves, minced
2 tbsp finely chopped fresh mint leaves (or 1 tbsp dried)

For burgers:
1 lb ground lamb
2 tsp Greek seasoning
1 tsp cumin
1 cup feta
1 cup cooked baby spinach
½ cup coarsely chopped PEPPADEW® hot or mild whole peppers salt and pepper
olive oil for coating (about 1 tbsp per burger)
8 whole wheat burger buns

For toppings:
romaine lettuce head, broken into large pieces
4 tomatoes, sliced
medium red onion, sliced

In a large bowl, mix the lamb, Greek seasoning, cumin, feta, spinach, and PEPPADEW® peppers together until well combined. Form into eight patties, and season both sides with salt and pepper. Heat a pan over medium-low heat, and coat with olive oil. Cook each burger patty for about 5 minutes on each side, covered, or until cooked through. If preferred, cook on a grill. Place the Greek yogurt in a bowl, and mix in the lemon juice, garlic, and mint leaves. Serve the burgers on the whole wheat buns with the lettuce, tomatoes, red onion, and yogurt sauce.
