PEPPADEW® Peppers Recipe

Hot Smoked Salmon PEPPADEW® Salad Recipe


Juice of ½ fresh lime
Dash of Tabasco Sauce (or to taste)
200g package smoked salmon strips (skinned)
Oil for greasing
Cajun Spice or jerk seasoning
Mixed lettuce leaves
½ cucumber, sliced very thinly
Quartered PEPPADEW® peppers

For Dressing:
1 Tbsp honey
3 Tbsp apple cider vinegar
1 tsp whole grain mustard
4 Tbsp olive oil
Salt and pepper

Mix the lime juice and Tabasco in a shallow bowl. Dip and drain the salmon strips and dust them lightly with the seasoning. Heat a ridged grill pan and brush lightly with oil. Pan grill the salmon strips for 2-3 minutes until heated through and scored with the lines of the pan. Meanwhile, whisk all the ingredients for the dressing in a bowl. Dress the salad leaves and cucumber slices and arrange on salad plates. Break the salmon into big chunks and arrange on the leaves, with the PEPPADEW® peppers. Drizzle any remaining dressing over the salmon and serve.
