Peppadew® Peppers Recipe

Gazpacho Recipe with Roasted PEPPADEW® Peppers


3 slices of bread
1 – 3 gloves garlic
1 cucumber- peeled
1/3 to ½ cup olive oil
1 (14oz) jar PEPPADEW® peppers
Red wine vinegar to taste (3 to 4 Tbsp)
4 to 5 large tomatoes chopped
1 Tbsp Oregano
½ medium white onion
Salt and Pepper to taste

Roast the PEPPADEW® peppers in a pan in the oven until slightly charred. In a food processor, finely chop the onions, garlic and bread. Add the remaining ingredients in the food processor and blend to the consistency of your choice. Chill.

Serve on top:
Chopped basil or
Finely chopped green onion and cucumber
