PEPPADEW® Peppers Recipe

Crispy Kale Salad with PEPPADEW® Vinaigrette Recipe


4 cups Kale
2 tsp Shallots, minced
1 cup Smoked bacon, raw, diced
2 tsp Honey
½ cup PEPPADEW® peppers
1 tsp Dijon Mustard
1 cup Olive Oil
1 cup Ricotta Salata cheese, grated
¼ cup White Balsamic Vinegar
Salt and Pepper

Rinse the kale in cold water and clean the leaf away from the stem. Set aside once cleaned and pat dry. In a cold pan, place in the smoked bacon. On medium heat, render the fat until the bacon is crispy, about 10-12 minutes. Remove from fat and set aside.

Take next 6 ingredients, place in a blender and blender together. Adjust seasoning with salt and Pepper. Toss the Kale with the dressing. Sprinkle with the bacon. Scatter the cheese on top and around. Finish with Cracked pepper if desired.
