2 avocado, diced and slightly mashed
100g fresh white crab meat
juice of half lemon
10 PEPPADEW® Peppers, quartered
half small red onion diced
20 small pieces sourdough bread, toasted
2 tbsp finely chopped chives
1 tbsp extra virgin olive oil
Preheat oven to 350°F. Brush the bread with olive oil and place on a baking tray. Cook for 7 minutes (lightly toasted) and then remove.
In a small bowl, mix together the avocado, lemon juice, chives and some salt and pepper.
Spoon a generous teaspoon on each piece of bread.
Top with some crab meat and 3-4 PEPPADEW® Pepper pieces.
