Peppadew® Peppers Recipe

PEPPADEW® Couscous Confetti Recipe


Two 3.5oz packets of Moroccan-style or plain couscous
Handful of peas, cooked
1 bunch of spring onions
4-5 drained mild Peppadew, diced, plus 2 tbsp liquid from the jar
1 carrot, peeled and finely diced
3 tbsp dried currants
2 tomatoes, diced
4 tbsp chopped fresh mint
2oz broccoli, broken into tiny florets

Cook the couscous per the directions on the box. Add olive oil to the boiling water before pouring in the couscous. Let couscous sit for 5 minutes. Fluff up the grains with a fork. Add the spring onions, carrot, tomatoes, broccoli and peas with the diced Peppadew peppers and currants. Mix well. Stir in the chopped mint with the liquid from the jar of PEPPADEW® peppers. Cover and set aside for at least 1 hour before serving.
