PEPPADEW® Peppers Recipe

Balsamic Roasted Lamb Cutlets Recipe with Red Onion & Peppadew® Peppers


2 Tbsp olive oil
½ cup PEPPADEW® peppers
8 lamb cutlets
4 Tbsp balsamic vinegar
4 cloves garlic
1 tsp soft brown sugar
1 red onion, cut into thin wedges
Salt and freshly ground black pepper, to taste
1 Tbsp freshly chopped rosemary
Freshly chopped flat-leaf parsley

Brush meat with oil. Heat a griddle pan and seal on both sides. 1-2 minutes per side. Arrange cutlets in a single layer in a shallow roasting tin. Add the garlic, onion, rosemary, PEPPADEW® peppers, vinegar and sugar. Season well with salt and freshly ground black pepper. Cover tightly with foil and roast in a preheated oven at 400 degrees F for 5 minutes. Remove foil and roast
for another 10 minutes or until chops are cooked to desired doneness. Transfer the meat and vegetables to a warmed serving plate. Mix the pan juices well and spoon over the meat. Serve immediately, garnished with parsley.
