1 cup Greek natural yogurt
Juice of one lemon
1 garlic clove, chopped
½ cucumber seeded and diced
1 tsp finely chopped fresh dill
Sea salt and fresh ground black pepper to taste
1 large whole baguette ( about 20 inches)
¼ cup Tzatziki dressing
100g nonfat cream cheese
4 PEPPADEW® peppers sliced thinly
1 avocado peeled and pitted and sliced
1 cup fresh arugula leaves, rinsed and patted dry
80g packet sliced smoked salmon
Mix all of the above ingredients together for the sauce of your baguette.
Cut baguette crosswise into 4 pieces, slice each piece in half lengthwise. Gently spread cream cheese over bottom portion of bread. Place arugula leaves over cream cheese and top with slices of avocado. Place smoked salmon on avocado. Season with pepper, if desired, and top with 2 Tbsp of Tzatziki sauce, add strips of PEPPADEW® peppers on to sauce. Cover with reserved sandwich tops.
