Rosti Potatoes with
Sweet Piquanté Peppers

Serves 4-6
Ingredients:
- 4 medium potatoes, peeled
- 1 tsp salt and fresh black pepper
- 1 large onion, finely chopped
- 4 tsp parsley
- 3 1/2 oz PEPPADEW™ Sweet Piquanté Peppers
- 2 oz butter, melted
- 5 1/4 oz coarsely grated vegetarian cheese
Instructions for Preparation:
- Melt butter and sauté onions until soft.
- Coarsely grate potatoes.
- Combine with the Sweet Piquanté Peppers, onion, cheese and parsley.
- Season well.
- Divide into 12 mound-shaped portions.
- Place on a greased baking sheet.
- Bake for 20 min. in a medium oven, until golden.
