Rosti Potatoes with Sweet Piquanté Peppers

 

Serves 4-6

Ingredients:

  • 4 medium potatoes, peeled
  • 1 tsp salt and fresh black pepper
  • 1 large onion, finely chopped
  • 4 tsp parsley
  • 3 1/2 oz PEPPADEW™ Sweet Piquanté Peppers
  • 2 oz butter, melted
  • 5 1/4 oz coarsely grated vegetarian cheese

Instructions for Preparation:

  1. Melt butter and sauté onions until soft.
  2. Coarsely grate potatoes.
  3. Combine with the Sweet Piquanté Peppers, onion, cheese and parsley.
  4. Season well.
  5. Divide into 12 mound-shaped portions.
  6. Place on a greased baking sheet.
  7. Bake for 20 min. in a medium oven, until golden.
