Sweet Piquanté Pepper Baskets

Serves 4

Ingredients:

  • 1 pack (7 oz) filo pastry
  • 2 tbsp olive oil
  • 2 medium size courgettes cut into small slices
  • 8 oz mushrooms
  • 1 crushed clove of garlic
  • 2 tsp tomato puree
  • 2 tsp sugar
  • 12 chopped PEPPADEW™ Sweet Piquanté Peppers
  • 1-2 tbsp PEPPADEW™ Sweet Piquanté Peppers liquid
  • 2 oz melted butter

Instructions for Preparation:

  1. Take 2 tbsp of liquid from a 14.75 oz jar of PEPPADEW™ Sweet Piquanté Peppers.
  2. Gently fry the courgettes, mushrooms, garlic, tomato puree and sugar in the olive oil until soft.
  3. Add the Sweet Piquanté Peppers and their liquid and season to taste.
  4. Put 8 upturned dariole moulds or ramikins on a baking sheet.
  5. Brush with melted butter.
  6. Cut filo pastry sheets in half and layer 3 pieces over the mould, brushing each sheet with melted butter.
  7. Bake for 10-12 minutes until golden brown at 400°F.
  8. Gently reheat the mixture and pile into the moulds.
  9. Serve as a starter or snack with either new potatoes, salad or green vegetables.
