 Exotic Sweet Piquanté Pepper Salad

Serves 2

Ingredients:

• Lettuce leaves, variety of choice, washed and crisped in fridge
• Avocado pear, pawpaw, pineapple, banana, mango
• PEPPADEW™ Sweet Piquanté Peppers
• Coriander leaves for garnish (optional)

Dressing

• 2 tbsp orange juice (if concentrated fresh juice is used, dilute slightly)
• 1 tbsp lemon juice
• 1/2 tbsp salt
• 4 tbsp olive oil
• 2 tbsp PEPPADEW™ Sweet Piquanté Pepper liquid (from the jar)
• 2 PEPPADEW™ Sweet Piquanté Peppers

Instructions for Preparation:

1. Arrange the lettuce leaves on a plate.
2. Slice fruit and place on top of the lettuce.
3. Slice avocado and Sweet Piquanté Peppers and place on top of the fruit.

Dressing

1. Mix together the orange juice, lemon juice, salt, olive oil, PEPPADEW™ Sweet Piquanté Pepper liquid and chopped Sweet Piquanté Peppers.
2. Mix and pour over prepared salad.
