Chicken Stir-fry

Serves 2

Ingredients:

  • Olive oil
  • 4 small leaks, thinly sliced
  • 1 yellow pepper, thinly sliced and blanched in boiling water for one minute
  • 3/4 oz. pineapple, thinly sliced
  • 3 courgettes, finely sliced
  • 4 PEPPADEW™ Sweet Piquanté Peppers, finely sliced
  • 2 chicken breasts cut into slivers

Sauce

  • 5 tsp soy sauce
  • 6 tsp PEPPADEW™ Sweet Piquanté Pepper liquid
  • 2 tsp corn flour
  • 5 tsp brown sugar

Instructions for Preparation:

  1. Drain the liquid from a 14.75 oz PEPPADEW™  jar.
  2. Heat a little oil in a wok.
  3. Stir-fry the leeks and then the peppers.
  4. Add the pineapple, courgettes and Sweet Piquanté Peppers and stir-fry for another minute.
  5. Push to the sides of the wok and add a little more oil.
  6. Stir-fry the slivers of chicken until almost cooked.
  7. Stir the sauce ingredients together and add to the wok.
  8. Cook until the mixture bubbles over, stirring occasionally.
  9. Serve immediately with rice.
