5 oz box pearled couscous, mixed basil & herb
¼ cup gourmet peppers, chopped
8 ounces crab meat
2 tablespoons Italian parsley, chopped
¼ cup extra virgin olive oil, divided
1 teaspoon red pepper flakes
juice of 1 lemon
20 PEPPADEW® peppers (See note below)
¼ cup tablespoons pimentos, chopped
Cook couscous according to package and allow cooling. Combine crab meat, two-thirds of the olive oil, lemon juice, pimentos, PEPPADEW® peppers, parsley, and pepper flakes in a mixing bowl. Stuff peppers with couscous filling. Chill until ready to serve and drizzle with remaining olive oil.
Recipe uses PEPPADEW® Goldew. Can also use the Red Mild PEPPADEW® peppers.
